Musings from the Threshold

An update on Andrew’s diet

I mentioned near the beginning of the month that we had discovered that Andrew does not deal well with the bovine milk protein that comes through in my milk (a condition called allergic colitis), that I had gone off dairy, and that he seemed to be improving.  I’ve now been off dairy since around 1pm on Thursday, September 30 (not that I’m counting or anything) and thought I’d give an update on how Andrew and I are doing.

Andrew is doing much better.  Over the first couple of weeks, we saw a dramatic improvement in his comfort level, cheerfulness, and the quality of his stools.  About three weeks in, however, it seemed like he was moving backward.  I felt quite unsettled about him, and called wonderful Mary, our midwife.  She connected me with a friend/client who has dealt with allergic colitis with a few of her babies and who has, through necessity, become an expert.  It was very helpful to talk with her, and I tweaked a couple of things after our conversation, including dropping goat cheese, as her experience indicated that it is any dairy, not just cow dairy, that causes trouble.  That helped a bit more.

Early this week, with Andrew still having the occasional pre-bloody (I can explain that in more detail if you really want) or blood-tinged diaper, I became more convinced that Andrew is one of those babies who cannot handle dairy or soy.  I have generally avoided soy products for years now, but I had not realized how many innocent looking foods have soybean oil in them.  I’ve peeled off a whole other layer of the dietary onion this week. And it seems to be paying off.

Just to give you an idea of the changes I’ve made, here are some of the things that are in the works in our kitchen:

Things at which I feel the need to develop proficiency/for which I need to find recipes that are dairy/soy free –
~ Tortillas
~ Mayonaise
~ Biscuits
~ Potato soup – a fall/winter staple in our home.
~ Popcorn. I tried it tonight with seasoned salt (and olive oil to hold the salt on the popcorn). It was passable, but nothing to hoot and holler about. I’m looking for ideas.
~ There are more on my mental list, but I can’t find the mental paper it’s on. I guess that’s a sign that I need to write it down with pen and paper.

Things I’ve tried/am trying –
~ Experiments in substituting for butter in various recipes. I have some coconut oil, but it is quite pricey, and I’m definitely not going to be making cookies with it at a cup or cup and a half per batch.
~ Today I tried an idea suggested by a friend – using mashed up white beans as a substitute for butter. I found a recipe for oatmeal cookies using beans and they were quite yummy. I’ll post more about this on my Love You Can Eat blog, because, well, it qualifies!
~ I have a batch of artisan bread dough in the fridge so I can start making bread again. Need a carrier for my homemade apple butter, you know. (Store-bought bread is pretty much an automatic fail)
~ I made cornbread last night. I generally use bacon drippings for the fat in my cornbread, so the only sub was almond milk instead of buttermillk. Quite tasty.

Foods for which I’m developing appreciation (read: my sanity savers) –
Almond Milk
Dark Chocolate Almond Milk
Dark Chocolate that doesn’t use soy lecithin as an emulsifier
Almond butter on gala apples
(Do you see an almond theme here? I’m extra grateful that almonds are an alkalizing food, or I would be in a world of hurt!)

In the midst of our food journey, I am thankful that we do not have to be concerned about one of the most common side effects of allergic colitis, failure to thrive.

Mothers Day Thoughts of Gratitude

Years ago, I realized that Mothers Day was much more fun if I focused on being grateful for the gift of motherhood instead of focusing on what recognition/admiration/gifts I might receive. To me, Mothers Day has become “Thank God I’m a Mother! Day.” It is also a great time to express my thankfulness to the mothers in my life, from my own Mama (the best on the planet!) to my mother-in-love, to the many women who have mothered me and/or taught me about mothering by example.

This morning, Andrew and I stayed home from meeting to rest, and I made some special bookmarks for our Blessings. Andrew doesn’t have one yet, but I don’t think he’ll mind if I’m late. I thought I’d share the text from the bookmarks in a gratitude post.

Davey
I love watching the young man you are becoming as you grow toward manhood. Your love of reading and thirst for knowledge is a joy, and you are a terrific big brother to your siblings. I appreciate your thoughtfulness and consideration. I pray that you will continue to yield to the Lord and become a godly man who follows Him with all of your being. I thank God for the blessing of being your mother, Davey. I love you.

Barak
What a joy it is to watch you grow and to see your character develop. Your love for justice, your gentleness with the Littles, and your entrepreneurial spirit are just a few of the things I like about you. From the day you were born, I have looked forward to seeing what God will do with your lightening bolt spirit as you submit yourself to Him. I pray that as you grow into a man, you will give yourself even more fully to your Heavenly Father & His will for you. It is a blessing to be your mother, Barak. I love you and thank God for you.

Elanor
Your sweet and tender spirit is a delight to my heart, dear daughter. I love to watch you nurture your younger siblings. It is a joy to watch you growing into a young lady who wants to follow the Lord and who is learning to yield to Him and go to Him for help. To hear you singing “psalms, hymns, and spiritual songs” in the lovely voice the Lord has given you has encouraged my heart countless times. I pray you will yield to Him as He continues His work in your life. I thank God that He blesses me with being your mother, Elanor. I love you.

Josiah
What a delight it is to have your “ray of sunshine” self in our family. I enjoy your bright spirit, your love of fun, and your affectionate nature. As you grow toward manhood, I see God growing you into the man He wants to you be, teaching you the balance between the fun and the weighty. I pray that you will submit to Him as He makes you more like Jesus. You are a joy-bringer, and I thank God for the blessing of being your mother. I love you, Josiah.

A few of my favorite things about you, Katie:

I also made one for my precious Mama:

Mama
I am blessed beyond measure to have been given you for a mother.
Thank you for the example that you are to me of godly womanhood: as a wife, mother, sister, and daughter.
I see Jesus in and through you and am blessed & challenged.
Thank you for your unconditional and sacrificial love.
Thank you for being my friend, for lifting me up countless times, and being on my cheering squad no matter what.
I love you, Mama
Happy Mothers Day

Thankful!

This afternoon I had a wonderful visit with my lovely midwife. As I went to update my Facebook status, I was struck by just how rewarding & fantastic it is to be planning a home birth in Missouri with a legal midwife, instead of planning to leave my kiddos & travel 8 hours away in order to work with one legally??

THANK YOU so very much to all of you who spent countless hours making this possible. Tears of joy overwhelm me…

Gratitude Challenges

I’ve been thinking lately about gratitude. Mostly because it seems the Lord keeps bringing it before me. Repeatedly. He’s good at things like that.

Several years ago, Ann Voskamp made a choice that would change her life. She chose to focus on gratitude, and began her list of One Thousand Gifts. In the years since, it’s become the endless list, because she didn’t stop at one thousand.

In this post, Sarah challenges us to give thanks when it’s inconvenient, for the hard things. A clip: And I should be grateful that He thinks enough of me to carefully craft difficulty to edge me toward beauty, kindness, and grace with pressure. I don’t want to just be thankful for the easy. I want to be grateful for the hard. And that involves a choice…one I’m making today.

I’m going to make the choice. I’m not sure yet what form my list will take, but I’m going to become more deliberate in choosing to be thankful. At least some of my list will be shared here, but I don’t yet know how much. We shall see…

For starters, I give thanks for:

1) The pain God uses to draw me to Himself, to teach and mold me. I do not understand why the answer to my prayers cannot yet be “Yes,” but I thank Him in the pain, for I know that He is good.

2) His love endures forever

3) that two year old little man, perched on his stool in the kitchen, patting out biscuit dough and cutting biscuits with me

4) the hard work my man puts in to support our family

5) parents who are two of my best friends

6) naps to the sound of rain outside my window

7) midwives

8) the myriad of colors in our sweet gum trees this fall

9) the comfort of my husband’s touch in the night

10) pie pumpkins lining my hearth
